Soft Oatmeal Raisin Cookies


NOTES

• Best oatmeal raisin cookies I've ever eaten

INGREDIENTS
• 1 stick (1/2 c.) unsalted butter, softened
• 2/3 c. light brown sugar, packed
• 1 egg
• 1/2 tsp vanilla extract
• 3/4 c. all-purpose flour
• 1/2 tsp baking soda
• 1/2 tsp ground cinnamon
• 1/4 tsp salt
• 1 1/2 c. old-fashioned rolled oats (not quick-cooking kind)
• 3/4 c. raisins

DIRECTIONS
1. Preheat oven to 350 degrees.
2. In your mixing bowl attached to your standing mixer, cream butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon, and salt together. Stir in the oats and raisins.
3. Chill the dough for a bit in the fridge (this ensures the cookies will be thick and chewy) then scoop onto ungreased cookie sheets. Bake them for 10-15 minutes or until lightly golden at edges and still a little undercooked-looking on top. Let them sit on baking sheet for a few minutes before transferring to a cooling rack.
